Today's recipe: Cheesy Chicken Parsley Bites
Ingredients:
6 slices of bread (crusts removed)
2 tablespoons of parsley (chopped)
1/2 cup finely grated cheese
3 tablespoons melted butter
3 eggs beaten
3 skinless chicken breasts (cut into bite sized pieces)
First process the bread into bread crumbs, then put the crumbs into a shallow dish and mix in the parsley and grated cheese. In another deeper dish put in the three eggs. And then, a few at a time, dip the chicken pieces into the eggs and then roll the eggy chicken in the bread crumbs making sure that you get a good amount of bread crumbs on the piece of chicken then place the chicken pieces on a oven tray, when they are all on put them in the oven on 180 degrees for 15-20 minutes or until golden and crispy on top.
Serve with a nice fresh salad and the sauces below for a fresh lunch or a light dinner or just have them with the sauces for a fancy snack

2 teaspoons lime juice

Maple Mustard mayo:
4 tablespoons mayonnaise
1 teaspoon wholegrain Dijon mustard
1 1/2 teaspoon maple syrup
1 teaspoon cold water
Slightly Spicy Tomato:
1 teaspoon sweet chilli sauce
2 tablespoons tomato sauce
2 teaspoons lime juice
